This is by far the most decadent dessert item my kids and I have cooked and oh my gosh was it yummy. Next week I promise it will be a healthy food item. Chocolate pizza was one of the recipes near the very end of a cookbook I was sent for review. The Cookie Dough Lover’s Cookbook, by Lindsay Landis, is a real treasure. When I first got it, published by Random House Canada, I thought what can possibly be made with raw cookie dough? Well, there are about 155 pages full of outrageously creative cookie dough treats, from raw cookie dough sandwiches, to peanut butter cups to chocolate chip cookie dough fudge and truffles. All of them delicious and not really terribly hard to make. This book is a keeper and a total hit. It would make an excellent gift for someone. And it’s only $19.95 in Canada. It gets my highest rating actually because of the cost, the variety and the creativity. Plus I love that the author is a popular food blogger in Nashville, Tennessee. Her blog is Love and Olive Oil.

This recipe is an excerpt from the Cookie Dough Lover’s Cookbook.

Page: 153. I used a variation because we had white chocolate instead of chocolate chips.

For the Crust: 

1/4 cup unsalted butter

1/2 cup sugar

1 egg

1/2 tsp vanilla extract

1 1/2 cups flour

1 tsp baking powder (Mix it all together and then knead or flatten out onto a pizza or cookie sheet. Bake for 10-12 minutes.)

For topping: 1/4 cup butter, 2 tbsps of granulated sugar, 1/4 cup of brown sugar, 1 tbsp of milk, 1/2 tsp of vanilla extract, 1/8 tsp of salt, 3/4 cup all purpose flour, 1/2 cup of chocolate chips or skor toffee bits or white vanilla chips, 1/3 cup caramel sauce..

Layer caramel sauce on the crust, then sprinkle the white chocolate or other chocolate chips.

Mix the flour, butter, both sugars, milk and salt plus vanilla. (this becomes the cookie dough bits) Roll it into balls and drop onto the caramel and crust. We tossed marshmallows on because the kids wanted to do that. Then drizzle caramel sauce on top again. Yummy!

This book gets my $$$$$ out of $$$$$. It is scrumptious and novel.
