Fighting Dinner Boredom

Dinner fatigue is real.

So, every night it’s the same old thing. Finding time and interest in making dinner around here is a big challenge some nights. There are nights when I look up from work and go UGH, seriously I have zero interest in making dinner for anyone tonight and I’m not even really hungry.

Literally this was me this week.

Teens are interesting. I mean. I love them dearly and yet occasionally you make something for dinner when you don’t even have a spare moment or a drop of energy and they barely glance at it. Other nights, you might suggest they make their own and they are crestfallen and starving. It’s like there’s no winning sometimes.

Payton’s Pasta Bake

But, this pasta bake is a winner. I’m dropping the recipe here as much for me as it is for you, because I want to return to making this again. This pasta bake created by Payton is light and tasty and it was a no meat pasta bake so if it is meatless Monday, then it fits too.

When I was having one of those moments this week and I did not want to go to the grocery store at all, then I let her loose in the pantry and the kitchen and the result was pretty great.

This week Payton helped me out and said: Mom, don’t stress. I will make a pasta bake. Love that she simply took over, and with the ingredients we had, made something tasty for the entire family.

Now, you might consider adding some cooked chicken to this too if you want a little variety. That would make the dish a bit more substantial. But we went with meatless this week because that’s a thing I am trying to embrace here a bit more often.

Easy Cheesy Meatless Pasta Bake

Tasty family friendly metaless pasta bake using farfalle noodles
Prep Time 25 minutes
Cook Time 30 minutes

Equipment

  • Measuring cup

Ingredients
  

  • 2 cups farfalle noodles
  • 1 dash salt
  • 1 dash ground pepper
  • cups shredded mozzarella cheese
  • 1 diced red pepper seeded
  • 2 tbsp pesto
  • 1 tbsp garlic butter
  • 1 chopped green onion

Instructions
 

  • Boil noodles until cooked and then drain.
  • Place them in a shallow casserole dish and add the red pepper, mix it up.
  • Add the garlic butter while pasta is still warm and stir it in.
  • Add the pesto and stir.
  • Sprinkle cheese on generously.
  • Top with salt and ground pepper.
  • Cover and bake for 20-25 minutes at 325 degrees. Then serve.
