Freezer Friendly Organic Fall Flavours #ad

Fall routines are in full swing again and mealtime can be a challenge. It’s hard to make creative and healthy food quickly enough to feed a busy family. I know it is a struggle. But, there are a few things I have found that can help with the process.

Preparing meats, sauces and even vegetables can help save time during the week. An hour or so on a Saturday or Sunday morning sometimes takes a bit of the sting out of busy weeknight dinnertimes.

Fall Dinner Timesavers

  • Wash your vegetables on the weekend and place them in small portions in containers in the fridge.
  • Brown up some meat and prepare sauce ahead of time on the weekend and place it in the freezer for later.
  • Plan out a few nights or maybe even a week’s worth of meals. I am not suggesting that you cook them on a Sunday or anything. Let’s be realistic here. But, you can sit down and decide if pasta night is Monday and Taco night is Tuesday and Wednesday is a casserole for instance. Then shop accordingly.
  • Get the Crock Pot out and throw a meal together in the morning.
  • Use your Instant Pot.

Classic Meat Sauce

As families everywhere adjust to busy schedules, a classic meat sauce is also a food prep staple – and for good reason, it’s protein-packed, crowd-pleasing and, most importantly, freezes well and can be reheated within minutes. Just boil your noodles fast when kids get in and warm up the sauce (see recipe below) and you have a speedy, healthy dinner.

Extra Meaty Sauce

Delicious meaty sauce that is made with organic pork

Ingredients
  

  • Ingredients:
  • • 1 pkg 400 g mild or hot Italian sausages
  • • 1 tbsp 15 mL olive oil
  • • 450 g 1 lb pork shoulder or pork cubes
  • • 450 g 1 lb ground pork
  • • 1 pkg 125 g sliced smoked ham, minced
  • • 2 large onions chopped
  • • 3 celery stalks chopped
  • • 1 green pepper finely diced
  • • 1/2 lb 225 g mushrooms, sliced
  • • 4 cloves garlic minced
  • • 1 large can 28 oz/794 g crushed tomatoes
  • • 2 large cans 56 oz/1.59 kg diced tomatoes
  • • 1 small can 5.5 oz/156 g tomato paste
  • • 30 ml 2 tbsp Italian seasoning
  • • Freshly ground salt and pepper

Instructions
 

  • Slice sausages in half lengthwise; remove and discard the casing.
  • In a large pot, heat oil over high heat. Add pork roast and sear on all sides. Remove from pot and set aside.
  • In the same pot, sauté sausage meat, ground pork and ham. Once meat is seared, add onions, celery, green pepper and garlic. Continue sautéing, stirring frequently until meat is cooked and vegetables are soft. Add crushed and diced tomatoes, tomato paste and seasoning. Bring to a boil and add salt and pepper to taste.
  • Return pork shoulder to pot, reduce heat to medium-low, cover and simmer for 2 to 3 hours until pork is tender. Remove from pot, shred using two forks and return meat to sauce.
  • Adjust seasoning to taste and serve over your favourite pasta.
