Gluten Free Tarragon Turkey Casserole and a Fiesta #Giveaway ARV $110

This is the story of my love affair with Fiesta Dinnerware. Well, perhaps I exaggerate a little bit. But Fiesta has changed my life. Listen here’s the thing, my friends and family who know me well, know I do not embrace colour very often. I am happy with black and white and tan, mostly with some red thrown in. But Fiesta dinnerware rocked my world earlier this year and now I am changed. I am embracing gorgeous colours now, and cooking with the prettiest lemongrass casserole dishes and I am (gasp) even painting in our house and colouring the walls brightly, claiming this space as our own. I feel so grown up. I love colour now. All the shades of glorious Fiesta dishes. My lovely new Fiesta dinnerware inspires me to want to cook and bake and build memories in the kitchen. That’s kind of how I built this Tarragon Turkey Casserole, which is also gluten free by the way.

Let me tell you a bit more about my summer. This summer I built a few new meals with my new Fiesta dishes. I started eating gluten free to see if that might impact some health concerns and issues I had here. And when I started eating gluten free with my one daughter, we both realized we need to get in the kitchen more often and we needed to build homemade recipes that fit this new lifestyle and dietary change. My kids both LOVE a couple of regular casseroles we make, but I was getting tired of cooking the same casseroles each month, so we dreamt this one up together. I had seen this gorgeous Fiesta dinnerware large covered casserole dish on the Fiesta site and I had to have it. And the prep bowls too.  I have combined colours lemongrass and turquoise with slate for our kitchen Fiesta dinnerware.

This summer I also did a fun Pinterest takeover for Fiesta Dinnerware. I highly recommend following their boards for some great recipes and really clever entertaining ideas. Click here for more of their clever Pinterest summer entertaining boards and recipes. Now all my recipes start with the Fiesta prep bowls, seen above. I have had a lot of luck finding some great gluten free pasta noodles in various shapes, sizes and forms and I was craving pasta badly the last little while, so casserole was on deck. This casserole is one I swear you will all love. It’s the best gluten free dinner I have had yet, proving gluten free food can be scrumptious too. (I will include a variation here too for those of you who are not gluten free).

This is a recipe I built with my daughter, Payton. The tarragon makes the turkey more flavourful. This tarragon turkey casserole reminds me a bit of a great holiday dinner. It’s comfort food that is family friendly and everybody will enjoy it with gluten free pasta, or with regular pasta. In the summer months this is perfect with fresh peas and tomatoes. It works for either gluten free or non gluten free families.

This is a dish your kids can easily help you make. As you know I enjoy cooking with my kids. They also like to help. One of them has been known to call the kitchen her happy place when we are baking together. I love that. I think my kids both find baking and cooking a relaxing sensory activity as well. The mixing, blending, shredding and sometimes cracking eggs gives them great sensory input. So many great reasons to get in the kitchen together.

Gluten Free Turkey Tarragon Casserole

This is pure comfort food that's family friendly and a surefire hit for any occasion. The turkey and tarragon combination evokes memories of a holiday dinner.

Ingredients
  

  • Turkey breast. buy a piece of turkey breast and cook it in the oven.
  • 2 cups of fusilli noodles we used gluten free
  • 2 fresh ripe, tomatoes
  • 1 cup of fresh green peas
  • 1/2 cup of water or milk.
  • 1 cup shredded old cheddar cheese white with a sharp edge
  • 1/2 cup of shredded cheddar cheese orange for topping at end
  • 1 teaspoon of tarragon
  • 1/2 teaspoon of pepper

Instructions
 

  • Cook turkey breast in the oven for as long as it takes. (This could be prepared earlier and sliced up or you might buy a package of ready to eat turkey breast strips.I have one local store here that I trust with really good quality turkey strips)
  • Slice turkey into small strips after deboning and removing the skin if you cooked your own turkey breast.
  • Boil water for the noodles and cook until del dente.
  • Rinse and drain noodles.
  • Pour into a lovely Fiesta Large covered casserole dish.
  • Add the water or milk
  • Add the shredded old cheddar and mix.
  • Add the chopped fresh tomatoes.
  • Add the peas.
  • Stir together.
  • Add the turkey
  • Add the tarragon
  • Stir together
  • Cook for about 40 minutes - stir a couple of times to make sure it isn't sticking.
  • I also put a tiny drizzle of olive oil on bottom of the dish to be sure it didn't stick.
  • Right before serving add the pepper and the cheddar cheese.
