Creamy Harry Potter Butterbeer Fudge

My family is hard core about Harry Potter. So, it was inevitable that we’d eventually make Butterbeer Fudge.

Why Do We Love Harry?

We have all of the Harry Potter movies and most of the Harry Potter books and many of the toys and puzzles too. Harry Potter is a perfect escapist adventure, especially during a pandemic, or for sick days. I asked my daughters both why they loved it and wanted to revisit the entire saga so many times during COVID-19. They said it just makes them happy to think there could be a place like Hogwarts.

We have slowly accumulated a bit of the Harry Potter merchandise too. My youngest girl has a shelf in her bedroom dedicated to Harry Potter books, toys, games and Daniel Radcliffe feature interviews in collectible magazines.

Butterbeer features prominently in several of the movies and we have yet to make that here, but stay tuned. We will make that one day soon and share it with you.

Harry Potter’s Favourite Fudge

When we heard about Butterbeer fudge we wanted to give that a try. My ids and I have yet to make fudge together, period. So, this seemed like the ideal one to start with last week. It did not disappoint!

The Harry Potter movie series also makes the most incredible family movie night theme. Everyone here will drop almost everything still in order to sit and watch Harry, Ron and Hermione battle Voldemort.

Over the last few months, we have become even more addicted too the entire franchise. Months ago we started thinking about butterbeer fudge and we planned to make some. But we needed a key ingredient, rum extract.

Pandemic Baking Stories

Do you think we could find that anywhere? NO WAY. In some ways, this pandemic has been surreal watching grocery stores and supply and demand spiking all over for oddball items.

That first couple of weeks everyone raced to stock up on toilet paper and the shelves ran dry. Kleenex and hand sanitizer also went missing everywhere. At one point, I had a teenager with a cold and we were running out of toiler paper and we had no facial tissues here at all. I tweeted that out and a friend nearby offered to porch drop some Kleenex or pop by with toilet tissue if the situation got critical.

Finding Baking Supplies

Shortly after that here, flour ran out at all of the stores. We were baking bread and using our bread machine non stop, so that could have been an issue, but we managed to find some at Shoppers Drug Mart and it was fine. Baking was literally our mental health therapy in the early days so running out of supplies would have been a problem. Then, after that there was a huge run on yeast. Luckily, we had enough.

Suffice it to say that finding baking supplies and ingredients during a pandemic has been an art in itself.

I was shocked to see run extract and other flavourings missing from shelves. After racing out to four different stores one morning, we finally found rum extract at Sobey’s and we launched into making our morning Butterbeer fudge.

Equipment

Ingredients

  • 1 can sweetened condensed milk
  • tsp rum extract
  • ¾ cup softened butter
  • 7.5 ounce jar marshallow fluff
  • 2 cups white sugar
  • 1/2 cup brown sugar
  • 1 bag butterscotch chips

Instructions

  • line an 8 by 8 pan with parchment paper or wax paper or spray it with non stick spray.
  • In a sauce pan over medium heat combine the condensed milk and butter, as well as the marshmallow fluff.
  • Add the white sugar and brown sugar slowly, stirring consistently.
  • Boil for about five minutes, but be sure to stir and watch closely. This can burn easily if you are not careful. You are trying to mix all of the sugar in until it blends and is not gritty.
  • Remove from the heat and add in the butterscotch chips, stirring until they melt.
  • Pour into the pan and let it cool for at least 30 minutes to one hour.
  • Slice and serve!

Do You Love Fudge?

We love fudge. Not sure why it took us so long to actually make it together as a family. I have made fudge before on my own, just not recently. My Mom and I used to make fudge together when I was a kid, so this a sort of recipe that has a visceral kind of feel for me.

Here’s hoping this is a recipe you can pass on to your kids too.

Do you have a favourite movie series? Is there a recipe that curls your toes? What is it?
