Six Fun Ways to Enjoy Valentine&#8217;s Day with Kids this Year Baking or Cooking Together Make some scrumptious and simple cupcakes or chocolates for Valentine&#8217;s Day and the kids will enjoy them as much as you do. Or you could all work together on a special Valentine&#8217;s Day meal, because it&#8217;s not possible to go out to a restaurant during a pandemic. Consider making these Red Velvet cupcakes. Valentine&#8217;s Scavenger Hunt There are so many fun scavenger hunts here right now. Why not print out the Valentine&#8217;s Scavenger Hunt and schedule it in for the afternoon. That makes for a fun activity to do on Valentine&#8217;s Day with kids. Tobogganning I know we are all under stay at home orders, but many of you probably have a nearby school yard or park nearby. We have one in our neighbourhood. It isn&#8217;t very steep but it works when the snow falls. It is a great way to spend an hour or so with kids. In a typical year, we would be taking this weekend to go and ski at Blue Mountain in Collingwood probably. So, in the ongoing commitment to keep kids active and fit this also works. Wear a mask and go at an hour when it&#8217;s less busy. Avoid crowds, of course. Make and Share Valentine&#8217;s Cards Valentine&#8217;s Day used to be one of my favourite holidays at school. I loved everything about it, from making the adorable little Kleenex box card holders to gathering and reading them all. MY GOSH, I just realized that was like an early form of social media. LOL. Adding up all of the Valentines is a primitive version of gathering likes on Facebook, views on TikTok or Instagram. These sweet Valentine&#8217;s Day cards are charming and honestly why not just print them out and let the kids drop these off in neighbourhood mailboxes. Or they might put some in the mail for their friends, cousins, anyone in their circle. I think it&#8217;s a sweet way to maintain contact and send a bit of cheer right now. Make Valentine&#8217;s Crafts I have gathered a few cute crafts here over the years. There&#8217;s always this adorable Valentine&#8217;s Colouring Page Printable. You might enjoy that, plus it is simple to do. Or make your own Valentine&#8217;s Day coupon booklet. Here&#8217;s how ours turned out. You are welcome to share that and print it out too. Read Books About Love Depending on the ages of your kids, you might gather up some cute books about love. Check your library and order some now to get them via curbside pickup. Or, order a few from Amazon. Here are some of my favourites: Love You Forever &#8211; Robert Munsch The I Love You Book by &#8211; Todd Parr The Peace Book by Todd Parr &#8211; we have always been big fans of his writing because he is one of the authors who always took diversity into account. His books feature LGBTQ+ families, and adoptive families and single parents. I love that. In fact, I highly recommend any of his books. Enjoying Recreating Travel Memories with Food Since we are all grounded right now and we can&#8217;t even consider travel, we are striving to recreate some occasional travel memories with recipes we make at home. I think that&#8217;s a common theme, with many families right now. Might as well eat well, right? Food Memories are Powerful There&#8217;s something about the smell and taste of food, sometimes even the feel of it that draws you back to a specific time and place. Food conjures up memories. It&#8217;s an emotional catalyst. Travel Back in Time That&#8217;s how we landed on these soft pretzels made in our bread maker. A few years ago, my daughter Payton took a trip to New York City with her theatre troupe and she fell hard for the soft pretzels that are sold on the street corners. She&#8217;s been considering those ever since and thinking about when and how to make them. Finally, we had time and the occasion to do this together. It took us a couple of tries to get the size right. But you won&#8217;t have that issue, because I took notes. This post will show you the right way to make soft pretzels in a bread maker. Ever since the pandemic began, my one daughter has been baking everything under the sun. She has been using our bread maker here for so many recipes requiring fresh dough. Late last year, we got a Hamilton Beach bread machine and it is my favourite small appliance. The bread maker has earned it&#8217;s keep and then some. Bread Machine Love Story In the last four months, we have made handmade pizza dough, about 10 different types of bread here, pretzel buns (a happy little accident), jam in the Hamilton Beach bread maker and so much more. This week, she figured out how to make soft pretzels in the bread maker. Now, I am not even a bread eating kind of gal or a carb craving kind of person. I need sweets and meat and all the protein, plus vegetables, of course. But bread and pretzels are rarely things that I seek out. However, that has all changed because my daughter Payton makes the most amazing and scrumptious breads, perfect pizza crust and soft pretzels. 					<description><![CDATA[<p>Oh boy, I know I don&#8217;t need to tell you that this year has been a doozy. We are all looking for some cheery ways to get through the summer. I&#8217;ve seen a lot of Christmas in July kinds of events happening online and at the start of the entire pandemic Christmas was a beacon of hope for many. Some were decorating trees in the front of their homes with Christmas decorations and bulbs as a show of strength and hope. Others put their trees up and I heard of one family who was actually doing a full Christmas in July kind of thing back in early April. So, Christmas in April, I guess. I&#8217;ll be honest here, every single new cancellation has been a huge blow to me. So, recently, when camps were cancelled and my final bit of hope for a manageable summer went up in smoke, I was devastated for all of us. Overnight summer camp has always been respite for us and a truly positive force for our daughter, who is simply a better person for months after she returns home. Salvaging Summer Anyways, safe to say, we are looking for ways to lean in and alter the course of what could be a rather sad socially distant summer. Thank heavens, we still have the swimming pool here in our backyard. I intend to keep it open as long as possible and to use it often. But what else can we do to get through? Is it possible to thrive this year, instead of just surviving? What Does Summer 2020 Look Like? What does that even look like right now? For us, so far, that&#8217;s been a lot of Harry Potter movie marathons, a bit of hiking and also inspirational rock painting and so many crafts. In fact, I am running out of crafts actually. No surprise there though. It&#8217;s my teens who are the crafty ones, not me. I suppose a pandemic summer begins with us taking care of our mental health, which is especially important right now, while also looking out for each other and getting creative too. Bring On Christmas in July Christmas in July is one idea I am floating around right now. The idea of challenging ourselves to think outside the box and make a charming adventure that&#8217;s just a little out of the ordinary seems like a great way to thrive and survive this July. Amish Sugar Cookies Recipe These Amish sugar cookies are just the right blend of sugary smooth buttery goodness and bright crunchy peppermint. I love peppermint this time of year especially. What&#8217;s a bit different about this recipe is the addition of chocolate chips. Everyone knows that chocolate and peppermint are the best combination of flavours! Bet you didn&#8217;t know that! They have been cultivated for over 3,000 years and appeared on the menus of the ancient Greeks, Romans and Egyptians. A cool weather fruit, the availability of all types of apples has expanded to year-round as they are now grown in southern hemisphere countries like New Zealand and Chile where the seasons are opposite to those in North America. In Ontario apples are readily available and fresh at the tail end of summer and most of the Fall months. Happily though we can eat them all year round here and they are typically pretty fresh and tasty. How to Buy All Types of Apples Select apples that are firm, without blemishes, wrinkles or bruises. Apples will not ripen if picked prematurely but mature apples will ripen further at home. How to Store Apples To hasten the ripening process, punch holes in a brown paper bag and store apples inside at room temperature. The ethylene gas they emit also causes other fruits to ripen quickly, so store apples separately. Refrigerated apples will keep much longer – up to several weeks – stored in plastic in the crisper drawer. A Dab of Lemon Juice Wash all apple varieties just before using or eating them. Core an apple before removing the skin – it is easier to handle. Exposed apple flesh turns brown quickly, so sprinkle with lemon juice to slow this process. If you are a Mom and you chop apples up into wedges for your kid&#8217;s lunches, this may help your apple slices stay fresh looking. That matters to kids who eat with their eyes and then their tastebuds. Kids are often fussy after all. Apple Nutrition Apples are a good source of Vitamin C and fibre. One average apple contains about 80 calories. So don&#8217;t skimp on eating apples. They are always a good choice and one of the first things I buy at the grocery store every single week. Best Types of Apples for Eating Though taste is subjective, these types of apples are the most popular types for eating fresh out of hand. Choices are listed alphabetically under each category. First choices: Baldwin, Granny Smith, Jonathan, McIntosh, Stayman Second choices: Empire, Fuji, Gala, Third choices: Golden Delicious, Russet, Spartan Have you ever been to an apple orchard? Take some time in September to go visit a local apple orchard near you. Here&#8217;s one of our favourite apple recipes which we made after visiting Apple Land. Best Varieties of Apples for Pies These varieties of apples hold their shape when exposed to high heat better than other apples and their flesh doesn’t turn mushy. Best Types of Apples for Baking These types are well-suited to making whole baked apples. Best Apple Varieties for Apple Sauce I love making apple sauce here. So easy. Toss the apples in the crockpot and let it simmer all day. Add a little bit of brown sugar or cinnamon. And Granny Smith is our all time favourite apple. But they are often so expensive. Best to wait until these are in season. Granny Smith, Northern Spy, Rome What are the Best Types of Apple Varieties for Salads and Fruit Plates? Best choices: Baldwin, Cortland, Granny Smith, Red Delicious The raw flesh on these apples resists browning better than other varieties. Best Types of Apple for Cider Have you ever made your own cider? I prefer to buy it because we don&#8217;t drink it too often. However, fresh, homemade cider is best and we have made it here. The smell alone is worth the effort. Your kitchen will smell like cinnamon and fall for days. Baldwin, McIntosh, Northern Spy, Russet are some common varieties of apples around here in Ontario. Easy Recipe for Cinnamon Red Wine Poached Apples Make this simple and elegant fall or winter recipe using Granny Smith, Northern Spy or Rome apples. Northern Spy apples are versatile and Granny Smith apples have that little scrumptious hint of sour. That&#8217;s why I love those. 					<description><![CDATA[<p>I woke up this week craving Kale Chips. I know, I know. Who does that? Well, apparently I do, so because I was craving them for a couple of days and kale was on sale I took a break Wednesday morning and made a batch of tasty kale chips. Frankly, there isn&#8217;t an easier recipe around. This kale chip recipe takes Kale, Olive Oil, Salt and Pepper. That&#8217;s it. Four simple ingredients and they are done. Easy, peasy lemon squeezy. Dozens of Kale Chip Recipes Kale was on sale this week so I grabbed a huge batch of it and washed it up, then patted it dry and decided to flavour these lightly. There are zillions of ways you could flavour homemade baked kale chips. Garlic? Chilli pepper? Red Pepper flakes? Parmesan cheese or lemon, maybe even lime, can also make a wonderful variation. However, for me I like them super simple and crispy. Mine have got to be crispy or no go. So when you wake up craving kale chips and want a tasty healthy snack to share here you go&#8230;.Don&#8217;t forget this recipe. Don&#8217;t think that kale is a taste you can acquire? Give it a shot at least once. You may be surprised. In the past I have found sometimes that raw kale can be gritty so you really have to wash and dry these well before baking them. Nobody likes a gritty texture in their vegetables or food. That just reminds you they once grew in dirt. So start by washing and drying extremely well. Originally I had no idea how simple it was to bake these for snacks. But we once received one of those food subscription boxes and the meal itself also contained a side recipe of baked kale chips. They were so much nicer than I ever imagined and light, as in not overly filling. So, after that original effort I was interested in trying other kale chip recipes and making my own. Now, this is my occasional superfood snack and it&#8217;s one I feel good about giving my kids. Tips Trim the stems off with a kitchen  gadget stem remover or rip them off with your hands. Stems are a bit too fibre-y to be part of this snack and be sure to rip into chip sized bites as well as spread them out on a cookie sheet. Then enjoy! Make sure they don&#8217;t overlap. For a big batch use 2 to 3 cookies sheets. They shrivel up a bit as they bake, but you don&#8217;t want them overlapping or they will be limp when done and not crispy. &#160; These are much better if you eat them all the same day. I have not yet found a way to store them homemade baked kale chips. How to Make this Kale Chips Recipe &#160; Tasty easy and healthy - these kale chips make a delicious snack! &#160; A Good Source of Minerals These Kale Chips are a wonderful source of minerals and protein as well as potassium. Iron, potassium and vitamin A are all high in kale chips. Kale has a decent amount of fibre in it too. If you buy prepackaged you will not have as much luck with fats and sodium content, so be warned. I like homemade and baked kale chips the best for these reasons. They are simply healthier!
