					<description><![CDATA[<p>Gluten Free Fireside Pie is the perfect comfort food for March weather. March Break is fast approaching and I don&#8217;t know about you but we are likely to be close to home. My older girl is traveling with a youth group, so my younger daughter and I will be hanging out together. Lucky for me, my youngest LOVES to cook and bake with me. I try to encourage that as often as possible. Cooking is a skill for life. This week we made a Gluten Free Fireside Pie together and it was the perfect comfort food for a Friday evening family dinner. March, might be the start of spring, but the weather is rarely warm. On a typical March Break we might do a day trip, cook or bake a couple of recipes together at home, and then squeeze in some skiing and maybe a movie too. If she&#8217;s lucky her friends might be around for a sleepover too. If there is snow this March break my daughter and I will go skiing. But I don&#8217;t think we will travel too far. I adore travel and have done a lot of press trips and personal trips already this year. I don&#8217;t adore getting gauged during March Break with flights that are twice the price just because kids and teachers are on spring break. So baking and cooking and skiing sound just right. And Gluten Free Fireside Pie is perfect food for after skiing. My girls are 15 and 12, almost 13, and they have been great helpers in the kitchen ever since they were small. We started having them wash potatoes, or add things to soups or crockpot meals. Then we slowly evolved over time. Cracking eggs, as long as they wash their hands afterwards, can be fun for any age. Mixing dough is also a treat for children. Flipping pancakes and baking cookies are always fun for toddlers and young children. &#160; If you give kids the responsibility of helping with meals early on they tend to take ownership and enjoy what they make. There can be less fighting over what&#8217;s for dinner and, as they grow, it&#8217;s nice to see them bake or cook for the family too. My oldest can make meals on her own and sometimes she will if I ask her to do dinner. She has a small but growing list of dishes she enjoys cooking and feels comfortable with making in the kitchen. We are working on my younger daughter too. My youngest has a few favourite meals she loves to make. One is salmon patties, because they are hands on sensory fun. She has sensory processing disorder, which I have written about here before. Another of her favourites is a tuna casserole. But I am slowly winning her over to a wider range of dishes and recipes. Last year we made salmon a few times together and sautéed asparagus and meals that she LOVED. It doesn&#8217;t hurt that she adores shows like MasterChef Canada. For those of you who don&#8217;t know, Fireside Pie is essentially like Shepherd&#8217;s Pie, but with cheese and a couple more spices. With this meal, I was able to ask my daughter to help chop the carrots and also make the mashed potatoes that go on top. That is another of her all time favourite side dishes &#8211; mashed potatoes. For a bit of a creamier texture we thought we&#8217;d add Gay Lea Low Fat Sour Cream to the mashed potatoes. I think it worked. Now I try to only have gluten in moderation and I am still working hard on making low sodium foods here for all of us. This fits both those categories. 					<description><![CDATA[<p>This month is such a great opportunity to show all your loves how much you care by baking, or making a special meal together. You might even create a sweet indulgence like these Gluten Free Lemon Squares. The winter doldrums won&#8217;t hit so hard if you break up the month with treats, and maybe take a break together too. These gluten free lemon treats are pretty easy to make and I happen to love all the lemony snacks as you know by now so these are a big hit with me. We just got back from a wonderful family ski trip to Vermont and loved every minute of it. Road trips and food go together like peanut butter and jelly. It was a 9 1/2 hour drive, so we certainly had food packed for the drive. We typically take carrots, celery, oranges, vegetable chips and a lot of water. But this time I also baked a banana bread and sliced it up for the long drive. That banana bread was tasty and a little reminder of home away from home. Road Trips always get me thinking what can we take with us, how can we eat better on the road, and how much food do we need? Also can I squeeze something super special and tasty in for car food? My family knows I always have something sweet to perk everyone up a little. And I typically pack printable road game scavenger hunts too. Who says car food, and car rides, need to be boring? No sooner were we back home from the Vermont trip than I started plotting our next getaway. Ski season is short and travel is essential when you ski, because you are always chasing the snow and the next great on mountain experience. We are heading straight back out on another road trip this week actually. But this time around I am bringing my Gluten Free Lemon Bars with us. That&#8217;s a sweet treat that my youngest daughter helped me to bake yesterday. She&#8217;s a great little chef and loves to be in the kitchen. Unless you are new here, you know by now that I have a longstanding sweet tooth issue. It&#8217;s my Achille&#8217;s Heel so to speak. Sugary snacks and treats are my favourite indulgence. Chocolate, cookies, jelly beans &#8211; I love all the sweets. Now don&#8217;t get me wrong at all. We eat mostly well and are super conscious of foods that fuel our bodies, especially when we are spending large amounts of time skiing, or swimming together. But, there&#8217;s nothing wrong with a couple of sweet indulgences from time to time. This week we are crushing on these Gluten Free Lemon Squares. I&#8217;ll let you in on a not so secretive fact about me &#8211; my two favourite, no three favourite flavours ever, are: caramel, butterscotch and lemon. Lemon treats, desserts, pies and candies are refreshing and, if done right, they are the perfect balance between sweet and tart. Sometimes romance in this house with a busy active family and a business is hard to find. So you have to steal small sweet indulgences. You know what I mean, right? Sneaking kisses in when the kids are busy texting someone. Making your spouse a coffee just the way they like it, and placing it in front of them without saying a word. Over the years my husband has become very good at surprising me with lemon treats. He knows that lemon meringue pie on an anniversary makes me happy. And a good cup of coffee is the way to my heart. This weekend we will be taking some of these scrumptious Gluten Free Lemon Squares with us when we head to Collingwood to ski. We&#8217;ll build memories and share something special together too at Parkbridge Resorts. 					<description><![CDATA[<p>I really couldn&#8217;t tell you where this gluten free journey would go when I started it at the outset of the summer. It could have gone either way. Last week we went to a cottage with a crowd of family members and although my daughter quit her gluten free diet (it&#8217;s impossible to convince a 14-year-old of anything much sometimes) I maintained mine. We gave up on hers for a bit and that&#8217;s okay, I think. I wish she had stuck it out, but maybe another time. Anyways I am super stoked to share this gluten free biscuit recipe with you here because it&#8217;s proof I have made it. I managed a whole week at the cottage and had only one slip up on the way there, which was not really a big one. I had no gluten free food packed and ready to eat and everyone in this family requested Subway on the way for lunch/dinner. There&#8217;s nothing gluten free about that place. That&#8217;s kind of the one thing I have had trouble with. The breads. I mean everyone needs a tiny bit of bread, right? I found a gluten free loaf of bread and travelled with it and ate only that at the cottage. Happy clapping, because that was hard. And it lasted most of the week. For the remainder of the week I had lots of barbecued meats and fish and I even maintained the small weight loss that has happened. It&#8217;s no big thing really but 4-5 pounds matters to me right now because I was at my heaviest weight ever this May. I&#8217;ve also been working on my blood pressure too. It&#8217;s all part of the gluten free deal for me. Anyways these gluten free biscuits are all my own and proof I am committed to baking and changing my habits as needed for this gluten free lifestyle to work. My heartburn is so much better than it was since the beginning of the summer. 					<description><![CDATA[<p>This is the story of my love affair with Fiesta Dinnerware. Well, perhaps I exaggerate a little bit. But Fiesta has changed my life. Listen here&#8217;s the thing, my friends and family who know me well, know I do not embrace colour very often. I am happy with black and white and tan, mostly with some red thrown in. But Fiesta dinnerware rocked my world earlier this year and now I am changed. I am embracing gorgeous colours now, and cooking with the prettiest lemongrass casserole dishes and I am (gasp) even painting in our house and colouring the walls brightly, claiming this space as our own. I feel so grown up. I love colour now. All the shades of glorious Fiesta dishes. My lovely new Fiesta dinnerware inspires me to want to cook and bake and build memories in the kitchen. That&#8217;s kind of how I built this Tarragon Turkey Casserole, which is also gluten free by the way. Let me tell you a bit more about my summer. This summer I built a few new meals with my new Fiesta dishes. I started eating gluten free to see if that might impact some health concerns and issues I had here. And when I started eating gluten free with my one daughter, we both realized we need to get in the kitchen more often and we needed to build homemade recipes that fit this new lifestyle and dietary change. My kids both LOVE a couple of regular casseroles we make, but I was getting tired of cooking the same casseroles each month, so we dreamt this one up together. I had seen this gorgeous Fiesta dinnerware large covered casserole dish on the Fiesta site and I had to have it. And the prep bowls too.  I have combined colours lemongrass and turquoise with slate for our kitchen Fiesta dinnerware. This summer I also did a fun Pinterest takeover for Fiesta Dinnerware. I highly recommend following their boards for some great recipes and really clever entertaining ideas. Click here for more of their clever Pinterest summer entertaining boards and recipes. Now all my recipes start with the Fiesta prep bowls, seen above. I have had a lot of luck finding some great gluten free pasta noodles in various shapes, sizes and forms and I was craving pasta badly the last little while, so casserole was on deck. This casserole is one I swear you will all love. It&#8217;s the best gluten free dinner I have had yet, proving gluten free food can be scrumptious too. (I will include a variation here too for those of you who are not gluten free). I can see this casserole dish being a regular feature here. The 90 ounce Fiesta dinnerware large covered casserole dish goes from stove to tabletop and can also fit in the dishwasher. How&#8217;s that for versatile? 					<description><![CDATA[<p>Remember earlier this year when I got a gorgeous batch of sexy new Fiesta dishes in slate? Well, over the summer I have been building my Fiesta collection. It has been such a glorious highlight of the summer. The Fiesta brand is colourful and durable and these dishes make me proud to serve a meal or a special appetizer. That&#8217;s what I love about Fiesta. They are traditional with a little hit of fun colour and so much sophistication. Over the summer I was guest pinner on Fiesta&#8217;s Pinterest account. And now that I am done that I am here to share two of my newest recipes with you. This one is a fun appetizer my kids and I built together. I let them name it &#8211; So today I am sharing this fun and healthy appetizer we dubbed Pepper Boats. They are tasty. I think they&#8217;d be even tastier in Fiesta&#8217;s entertainment set. For all my entertaining, cooking and baking now I start with Fiesta bowls. I love the Fiesta bowls. And frankly there are so many to choose from. When you buy their dinnerware table setting you get these lovely bowls above. I&#8217;ve added some turquoise blue pieces to my slate set of dishes so my table setting can look a bit cuter and more colourful sometimes. These bowls are perfect for salad or fruits and vegetables. To start &#8211; remember to cut your peppers in half sideways. These are mini rainbow sweet peppers that are in season. My kids love peppers as long as they are not too spicy and not too mushy. When I boil peppers they are not huge fans of the texture. So these are not boiled. They have more of a raw vegetable texture. And peppers have powerful nutritional punch so I love that as a Mom concerned about healthy eating. For a long time I ran a series here called Cooking With Kids. Now that series is a Cooking With Kids Pinterest board. We still love cooking and baking together. Cooking with children is impactful for a lot of reasons. There are dozens of skills to be learned while baking or cooking. First there&#8217;s quality time spent with them, which is never to be undervalued. Then there&#8217;s all the great measuring and reading. If you are baking something you have already got a recipe for, then it&#8217;s a great way for them to do more reading and more math with you too. In the summer that makes sense. We created this recipe ourselves. That takes some creativity and imagination. Then there&#8217;s the part I enjoy a lot as a parent. It&#8217;s a bit self serving. Kids who cook with you tend to be more interested in eating what they have made. Plus they grow up able to help out once in awhile so yeah for that! My older daughter can make a small rotation of meals on her own if I am in a pinch and ask her to cook. In fact she made a warm lunch for all of us today. For this one, we got creative together. My older daughter helped with this, because this summer we have both gone gluten free. Part of that process has meant we need to rediscover how to meal plan and even how to cook. So we made this our first gluten free appetizer. It turned out yummy and is pretty simple to make. The recipe follows. My Fiesta bowls seen above can be bought at Homer Laughlin site. Chances are good, that even if you don&#8217;t eat gluten free right now, that someone you know eats gluten free. I recently ran a gluten free roundup here and was shocked at the response to the post. That shows me that many of my readers are gluten free. In fact I was gluten free for several years in my twenties because my Crohn&#8217;s Disease was probably at its worst ever back then. I was very limited with what I could eat and it seemed for many years like almost every food gave me stomach pain. So dairy was banished for at least a decade or more and then I went gluten free. I was gluten free and dairy free for at least five to ten years in my twenties. Back then gluten free was not what it is today. Today&#8217;s gluten free community has a lot of options. Even many popular restaurants are on board. I keep saying this, and one day soon I will do it. I really need to try this again and see what it does for my energy levels and my weight. 					<description><![CDATA[<p>These Oriental Gluten Free Beef Lettuce Wraps have been a long time coming to fruition. I have been thinking about lettuce wraps and gluten free wraps for quite some time. Finally I had the materials and the time and inclination to actually make them. In fact these gluten free wraps are so easy and tasty too. Plus they don&#8217;t leave me feeling all bloated and sluggish as wraps with gluten do sometimes. Where possible, whenever possible, I enjoy making gluten free meals and snacks. My stomach simply seems to respond in a much nicer way. In fact I am on again off again gluten free here. You know the story &#8211; I cut it out for a bit and then feel kind of bored with that and get overly confident and lapse back into eating gluten again. Never really super committed or completely 100 % GF but I was once for a long period of time in my 20s completely gluten free. That was a challenge. So my daily routine is more like limited gluten as opposed to gluten free. I never reach for bread as a choice. It&#8217;s not my happy food or my comfort food. And I could go without it entirely if there was an alternative. So, I try to keep a repertoire of recipes so I am able to make gluten free when I need to. Until recently I had never made gluten free Oriental Beef lettuce wraps. Oh, I have been wanting to make lettuce wraps for a long time now. For some reason I seemed to always be missing one or two of the ingredients necessary to make this recipe. So just last week when I was hunting around for dinner ideas on a busy Tuesday night I finally realized, after I almost settled for a boxed kit of taco shells, that I had all the things I needed to make easy tasty oriental beef lettuce wraps. I rarely cook by taste because I don&#8217;t trust myself to do so, but I gave it a good old try and these Oriental Gluten Free Beef Lettuce Wraps turned out amazing! My kids loved them because they are fun and unique. Even my husband enjoyed them. But his only complaint was that on a night when he was going to martial arts lessons he felt like he needed to eat about 6 or 7 of these to have enough energy for a full workout. So maybe next time we will make more. If you are a family that enjoys bigger meals then maybe double this recipe. My kids and I were fine and not overly full. I liked that these felt less heavy than traditional wraps.
