Scrumptious lemon squares that are also gluten free.

Ingredients
  

  • 1/2 cup of Gay Lea salted or unsalted butter either will do
  • 1 1/2 cups of potato flour or potato starch
  • 1 1/4 cups of sugar
  • 3 eggs
  • 3 lemons
  • pinch of vanilla
  • two tablespoons of icing sugar

Instructions
 

  • Preheat oven to 350
  • Melt 1/2 cup of butter until soft not liquid
  • Blend in 1 1/4 cups potato flour
  • Add 1/4 cup of sugar
  • And add pinch of vanilla
  • Whisk together until the mixture forms a crust.
  • Use an 8 by 8 cooking pan
  • Spray the bottom of the pan lightly and then line with parchment paper
  • Back the crust for 10 minutes and remove from the oven
  • In a separate bowl combine
  • eggs
  • squeeze juice out of three lemons
  • combine eggs with lemon juice
  • add 1 cup of sugar
  • Add one tiny container of Gay Lea Nordica Smooth Lemon cottage cheese
  • Whisk together until smooth and well blended.
  • Pour the lemon mixture over the crust
  • Bake 20 minutes at 350.
  • Remove from oven and let cool then cut into squares.
