Gluten Free Lemon Squares - Sweet Indulgence #BornOnTheFarm

Scrumptious lemon squares that are also gluten free.

Ingredients
  

  • 1/2 cup of Gay Lea salted or unsalted butter either will do
  • 1 1/2 cups of potato flour or potato starch
  • 1 1/4 cups of sugar
  • 3 eggs
  • 3 lemons
  • pinch of vanilla
  • two tablespoons of icing sugar

Method
 

  1. Preheat oven to 350
  2. Melt 1/2 cup of butter until soft not liquid
  3. Blend in 1 1/4 cups potato flour
  4. Add 1/4 cup of sugar
  5. And add pinch of vanilla
  6. Whisk together until the mixture forms a crust.
  7. Use an 8 by 8 cooking pan
  8. Spray the bottom of the pan lightly and then line with parchment paper
  9. Back the crust for 10 minutes and remove from the oven
  10. In a separate bowl combine
  11. eggs
  12. squeeze juice out of three lemons
  13. combine eggs with lemon juice
  14. add 1 cup of sugar
  15. Add one tiny container of Gay Lea Nordica Smooth Lemon cottage cheese
  16. Whisk together until smooth and well blended.
  17. Pour the lemon mixture over the crust
  18. Bake 20 minutes at 350.
  19. Remove from oven and let cool then cut into squares.
