Meatballs
  1. Place lean ground chicken in a mixing bowl
  2. Crack 2 medium eggs into the bowl and stir
  3. Add the bread crumbs (when shopping try to find the bread crumbs with the parmesan or romano cheese and herbs. This makes tastier meatballs
  4. Stir meat mixture together
  5. With clean hands roll the meat mixture into small balls (should make close to 100 tiny meatballs)
  6. Broil on a cookie sheet in oven for about 10 minutes and then remove from heat.
  7. Freeze half of the meatballs for the next batch.
Italian Wedding Soup
  1. Saute onion and garlic on the stove in a spoonful of olive oil
  2. Add two full containers of low sodium broth to the crock pot
  3. Set crock pot to low for 6-7 hours
  4. Put onion and garlic mixture in the crockpot liquid broth
  5. Wash kale and rip into tiny bits, remove as much of the stem and veins as possible. Don't be stingy.
  6. Add about 50 of your small meatballs
  7. Add scoop of pesto
  8. Cook all day in the crock pot
  9. About 90 minutes before you serve add the noodles and continue to let it cook.
  10. Check on the noodles before you serve, but they should be completely done.
  11. Ladel and serve. This amount often gets us each 2 bowls and that's enough for dinner. If you have large appetites, then you could serve this as an appetizer instead alongside a bigger meal.
