Memories of Mexico summer nachos and guacamole

Easy, fast meal for summer days spent exploring or lounging by the pool entertaining.

Ingredients
  

  • 1 lb lean Ground Beef
  • Container of Gay Lea low fat sour cream
  • One onion - red or regular - diced
  • 1/4 to mato - diced
  • lime wedge
  • salsa
  • cheddar cheese - 1 1/4 cup of shredded cheese
  • A Bag of Tortilla chips

Method
 

  1. For the nachos
  2. Brown the ground beef
  3. Add one quarter of an onion diced and brown together.
  4. Drain excess fat off the meat, onion mixture. Let sit.
  5. Using a shallow casserole dish spread out big tortilla chips on the bottom
  6. Spread some of the meat on top and sprinkle cheese on that
  7. Layer more tortilla chips
  8. Top with meat and cheese.
  9. Add the salsa to the top and spread it out a bit
  10. Sprinkle on another layer of cheese
  11. Bake that for 10 minutes maximum at 350
  12. Guacamole
  13. Chop your avocado in quarters and remove the pit
  14. Scoop out the avocado and put it into a bowl
  15. It should be soft enough to mash with a fork
  16. Squeeze juice of one small wedge of lime into the mushed avocado.
  17. Add 1/4 of a diced tomato
  18. Then add 1/4 of a diced onion
  19. Add 2 Tablespoons of Gay Lea Low Fat sour cream and mix
  20. Blend it all together by hand. The fork should do it if ingredients are ripe. If you don't like chunks you can blend gently with a hand mixer.
  21. Taste before serving - I do not add salt or pepper. It doesn't need it.
  22. Spoon another 2-3 TBSPS of Gay Lea Sour Cream into a side dish
  23. Scoop Guacamole into a separate side dish and serve alongside the Meaty Nachos
  24. If you are adventuresome chop up some jalapeños and toss on top of the nachos before serving..
  25. ENJOY this easy and fast summer meal!
