Elf Inspired Cupcakes

Fun and festive frosted Elf inspired cupcakes are fun for the kids to decorate too.

Ingredients
  

  • 1 box of french vanilla cake mix
  • 3 eggs
  • 1/2 C 1 stick of softened unsalted sweet cream butter
  • One cup of whole milk
  • Single tsp vanilla extract
  • Container of Christmas sprinkles
  • Small bag of red and green M&M's
  • 2 C of mini marshmallows
  • Festive cupcake liners
  • Your cupcake pan
  • Frosting Ingredients
  • One Cup unsalted butter
  • A Cup of powder sugar
  • 5 TBSP heavy whipping cream
  • Teaspoon of Vanilla bean paste
  • Disposable piping bag
  • number 3 piping tip

Method
 

  1. Preheat oven to 350 and line cupcake pan with the liners
  2. Using a hand mixer, beat together the cake mix, butter, milk, and vanilla and mix until combined
  3. Take a medium ice cream scoop and, scoop the batter into the cupcake liners and fill about 3/4 of the way full
  4. Bake in the oven for about 21 minutes
  5. Pull cupcakes out and place on the side to cool
  6. Frosting Directions
  7. In a standing mixer, combine the butter, powder sugar, vanilla, and the heavy whipping cream.
  8. Mix on medium speed until stiff and creamy.
  9. If you still see powdery pebbles, add in 2 more tbsp heavy whipping cream.
  10. Continue to mix until stiff and creamy
  11. Scoop frosting into the piping bag fitting with the number 3 tip
  12. Using your tip with the frosting, pipe squiggles all over the top of the cupcake
  13. Sprinkle the Christmas sprinkles and M&M's all over the top
  14. Top with 4 mini marshmallows
