I have a weakness for sweets but more than that cookies. Cookies are my soft spot. Iced cookies? Well, those are a little bit of sunshine in a perfect little bundle. Don’t you agree? What’s your favourite type of cookie? Mine are similar to these right here – iced and sweet and soft cookies. Yum! Swig cookies are pretty famous but you can make your own now with this copycat variation on a traditional cookie.

You can tell with these ones that they will be soft and delicious as soon as you read the list of ingredients. Sour cream makes things so moist and flavourful sometimes.

Swig Cookies Recipe

Sweet sugary Swig cookies with icing. These are bound to be a bakesale hit!

Ingredients
  

  • Ingredients
  • 2 sticks unsalted butter
  • ¾ C vegetable oil
  • C white sugar
  • ¾ C powdered sugar
  • 2 TBSP water
  • 2 eggs room temp
  • ½ tsp baking soda
  • ½ tsp cream of tarter
  • 1 tsp salt
  • C all purpose flour
  • Also
  • 1/4 cup sugar
  • 1 TBSP salt
  • Frosting:
  • 6 TBPS butter room temp
  • ½ C sour cream
  • 3 C powdered sugar
  • ½ tsp salt
  • 3-5 TBPS milk
  • ½ tsp. almond extract
  • red gel food colouring

Method
 

  1. -Cream together the butter, oil, sugars, water and eggs- set to the side
  2. -In a separate bowl, combine ALL dry ingredients and mix lightly
  3. -Slowly add 1/2 to 1 C of the dry mix to the butter mixture- mix lightly continue this step until all ingredients are combined
  4. -Mix until well blended
  5. -Dough will not stick together very well it is very flaky
  6. -Roll dough into golf ball sized balls with your hands and then place the dough on a parchment lined cookie sheet.
  7. Step 2 ( preparing cookie to bake )
  8. -Mix 1/4 C of white sugar and a pinch of salt in a small bowl.
  9. -Take a tall glass, dip it into the bowl with the mixture of sugar and salt.
  10. -Now place the bottom of a glass that has the mixture on it and then press it onto your ball of dough.
  11. -Press down hard to give the cookies their cracked edges. (These should extend beyond the size of the glass)
  12. Baking
  13. -Bake at 350 degrees for 8 minutes.
  14. -Remove from the cookie from the baking pan after cooling for 10 minutes and place on a wire rack to cool completely.
  15. -After completely cooled place in a storage container and keep in the refrigerator until ready to serve.
  16. Now make the frosting:

  19. TBPS butter, room temp
  20. ½ C sour cream
  21. C powdered sugar
  22. ½ tsp salt
  23. -5 TBPS milk
  24. ½ tsp. almond extract
  25. red gel food colouring
  26. Directions
  27. - Blend soft butter, sour cream, powdered sugar, salt, 1 drop food coloring and almond extract.
  28. -Mix well.
  29. -If needed add drops of milk until you get it to the thickness you want.
  30. -Spread frosting on cookies right before serving

    These not only look delicious but are just so pretty. Love that pink frosting! My favorite cookie is oatmeal chocolate chip. I don’t make them too often because I tend to not be able to control myself.
