Yesterday we tried a great little Dempster's recipe that I had my eye on for several weeks. At one point somebody sent a flyer around with the usual Dempster's promotions in it and I found this recipe for Turkey Stuffing Pot Pie. I thought it looked so yummy that I had to make it. The ingredients and instructions are perfect for tweens who like to help cook and Payton was eager to help.

We ended up with two versions. The Turkey Stuffing Pot Pie can be served in individual ramekins so everyone has their own perfect Turkey Pot Pie. But we didn't have enough of those, so I used a Tenderflake pie crust for the one in the photo below and above I scooped the remaining mixture into a casserole dish.

My kids loved this recipe. It is chock full of vegetables and it was really fast to bake.

Ingredients: Via Dempster's . Thanks to Dempster's for the great ideas.

4 tsp butter or margarine
1 tsp vegetable oil
i small onion
1 stalk of celery (chopped finely)
1/2 tsp each of thyme, sage, salt and pepper
1 Prime Boneless skinless Turkey breast
1 cup of fresh or frozen vegetables
3/4 cup of milk
1/2 cup of chicken broth
1 tbsp of corn starch
4 slices of multigrain Dempster's bread
1/4 cup of dried cranberries
2 egg whites

Instructions: preheat oven to 350.
If using Tenderflake shells then warm these up as per instructions on the box.
Heat the butter and oil in a skillet and add the onion, celery and thyme, sage, salt and pepper. Sautee for 4 minutes. Spoon half of the vegetable mix aside.
Return frying pan to the heat with remaining vegetable mixture and then add the turkey and cook until browned. Stir in the vegetables.
Whisk the milk and corn starch together. Add to the frying pan and cook until bubbly and thickened. Divide this between the ramekins or the pie shell or dishes you are using to bake in. Toss cubed bread with reserve vegetables and cranberries. Melt remaining butter. Whisk remaining 1/4 cup chicken broth with egg whites. Drizzle melted butter and broth over the bread mixture. Toss to combine. Divide between your dishes and then bake the whole thing for 20 to 25 minutes. Enjoy!

This looks so easy and delicious!! We love turkey and I have made a pot pie before but have never used bread, cranberries or egg whites. I've pinned it so I can try it soon.
