Pumpkin spice is one of my all time favourite seasons. Wait, that’s right, I said seasons. All the pumpkin recipes are timeless and scrumptious in my opinion. But this one, pumpkin spice monkey bread, is a showstopper. So easy to make too.

Pumpkin Spice Monkey Bread
Such a tasty way to enjoy the autumn flavours of pumpkin spice monkey bread. You need to start with a Bundt pan though, so don’t forget to get one before you start. I love this Bundt pan.
If you make these regularly then you can also use a Bundt cake keeper to keep the baked goods and cakes that you make fresh all week, or all day long, depending on how fast you each these and how big a sweet tooth you have.

Pumpkin Spice Bundt Cake
So much to love about pumpkin flavoured foods, drinks and treats.
Monkey bread is basically sticky, tasty and super simple. If you have Pillsbury cinnamon rolls you can substitute those and rip them apart when cooked. There are a lot of ways to do this recipe with bread or buns that you probably already have in your home.
Pumpkin Spice Monkey Bread
Equipment
- Bundt Pan
- whisk
Ingredients
- 2 16 ounce cans cinnamon rolls
- 1 cup light brown sugar
- 1/4 cup unsalted sweet cream butter, softened
- 1 cup pumpkin puree
- 4 ounces cream cheese, softened
- 1 tsp pure vanilla extract
- 1/2 cup sugar
- 2 tbsp pumpkin pie spice
Cinnamon Glaze
- 1 cup powdered sugar
- 1 tsp pure vanilla extract
- 3 tbsp milk
- 2 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees and spray a 9in bundt pan with baking spray
- Using a medium sauce pan over medium heat add the brown sugar, vanilla, butter and cream cheese
- Whisk until smooth and set aside
- Remove the cinnamon rolls from the cans and cut each roll into 4 pieces
- Place 1/2 cup of sugar and 2 tbsp of pumpkin pie spice into a Ziplock bag
- Place the cut cinnamon rolls into the ziplock bag and shake the bad to coat the cinnamon rolls
- Place half of the coated cinnamon rolls into the bundt pan, pour half of the pumpkin mixture over the cinnamon rolls
- Top with remaining cinnamon rolls and pour the remaining pumpkin over the cinnamon rolls
- Place the bundt cake onto a cookie sheet and into the oven
- Bake for 35-40 minutes or until they look done.
- Remove from oven and allow to cool for 15 minutes before turning the pan over onto a wire rack
- Remove the pan from the monkey bread
- In a medium bowl, whisk the glaze ingredients until combined and smooth
- Drizzle the glaze over the monkey bread and let harden a little before serving.
