This week we tried a fantastic new recipe that will be a staple here for years to come. Tuscan Chicken. So easy and nutritious and the whole family got in on the action. Start with chicken breasts and a bit of flour. The great thing about these Clubhouse Flavourful Recipe Mixes is the whole recipe is right there on the package. So simple for shopping and preparation and execution of a great family meal.

Put four spoonfuls of olive oil and heat in sauce pan. Take chicken breasts and coat with flour then sautee in a sauce pan for two minutes each side.Then remove from heat. Set aside. Add one medium sliced onion and one red bell pepper to pan and sautee. Stir constantly. Add the remaining bit of flour and add also 1 and 1/2 cups of table cream. Add one bag of baby spinach.

I have been eating a whole lot of chicken lately, but this gave a really nice spin on an old classic. No naked chicken here and frankly the addition of spinach and bell peppers made me ecstatic. The kids hardly even noticed I was feeding them spinach. Such a great nutrient dense vegetable to hide in their meals!

Carefully bring sauce to a boil. Add the chicken again. Reduce heat. Cover and simmer for 15-20 minutes. Serve over noodles. And you get this. Are you kidding me? I loved this delicious Clubhouse chicken meal and so did the rest of the family. There is a slight peppery punch here that made my children drink all their water and milk.
