I missed Thanksgiving this year. Oh, don’t feel bad for me. I missed out on a big delicious turkey dinner because I left for a fellowship in Zambia the Friday before Thanksgiving. Subway sandwiches have become a road trip tradition with my family. It’s true. The running joke is that my kids can spot a Subway in any city we go to, and so far, we’ve tested this Subway superpower quite a bit this year! The girls can be half asleep staring at an IPOD when suddenly we hear – “SUBWAY!” Every time we take a road trip, my daughter asks to stop at Subway!
