Remember earlier this year when I got a gorgeous batch of sexy new Fiesta dishes in slate? Well, over the summer I have been building my Fiesta collection. It has been such a glorious highlight of the summer. The Fiesta brand is colourful and durable and these dishes make me proud to serve a meal or a special appetizer. That’s what I love about Fiesta. They are traditional with a little hit of fun colour and so much sophistication. Over the summer I was guest pinner on Fiesta’s Pinterest account. And now that I am done that I am here to share two of my newest recipes with you. This one is a fun appetizer my kids and I built together. I let them name it – So today I am sharing this fun and healthy appetizer we dubbed Pepper Boats. They are tasty. I think they’d be even tastier in Fiesta’s entertainment set.
For all my entertaining, cooking and baking now I start with Fiesta bowls. I love the Fiesta bowls. And frankly there are so many to choose from. When you buy their dinnerware table setting you get these lovely bowls above. I’ve added some turquoise blue pieces to my slate set of dishes so my table setting can look a bit cuter and more colourful sometimes. These bowls are perfect for salad or fruits and vegetables.
To start – remember to cut your peppers in half sideways. These are mini rainbow sweet peppers that are in season. My kids love peppers as long as they are not too spicy and not too mushy. When I boil peppers they are not huge fans of the texture. So these are not boiled. They have more of a raw vegetable texture. And peppers have powerful nutritional punch so I love that as a Mom concerned about healthy eating.
For this one, we got creative together. My older daughter helped with this, because this summer we have both gone gluten free. Part of that process has meant we need to rediscover how to meal plan and even how to cook. So we made this our first gluten free appetizer. It turned out yummy and is pretty simple to make. The recipe follows.
My Fiesta bowls seen above can be bought at Homer Laughlin site. When you buy the Fiesta three piece baking bowl set, you also can purchase the prep bowl set for $19.99. I now have the gorgeous baking bowl set in turquoise.
The baking bowl set contains:
- One Small 2 1/2 Quart
- One Medium 4 Quart
- One Larger 6 Quart
That’s a great sale for the prep set seen above in lemongrass. Of course you can choose your own colours. Stay tuned for one more original recipe – kid friendly of course – that also involves my kids and features Fiesta. The next recipe will also feature a Fiesta giveaway. Don’t forget to follow Fiesta’s Pinterest Summer Entertaining board. Fiesta is also on Facebook.
Gluten Free Pepper Boats Appetizer - Featuring Fiesta Dishes
Ingredients
- Mini Rainbow peppers - one bag should contain at least 20
- 1/4 package Cream cheese
- 1 cup of Rice
- Rosemary
- 1 Broiled chicken breast
- 3 tablespoons shredded cheddar cheese
Instructions
- Cut the peppers in two sideways and clean them out. Wash and rinse as well. Then set aside.
- Cook the chicken breast without any seasoning other than salt and pepper.
- Dice the chicken.
- Boil rice until moist. Remove from heat and let cool.
- Add about 1/4 teaspoon of crushed rosemary.
- Add the cream cheese and mix together.
- The mixture should be moist so be sure to blend so that cream cheese covers the rice. If it doesn't seem like enough add a bit more cream cheese.
- Place on a cookie sheet.
- Top with a small amount of the shredded cheddar cheese.
- Turn oven to 325 and cook for 5-10 minutes, covered.
- Serve warm
These peppers would be great for any entertaining you have to do. I can’t even tell you how much taste the cream cheese adds to these! It actually makes the recipe. How tasty would they be at a holiday gathering too?!

I have been very fortunate to work with Fiesta Dinnerware over the course of the summer. I received some lovely products to feature here as a result. I love Fiesta. Fiesta makes the kind of dishes and serving pieces that stand the test of time. And the colourful nature of the dinnerware makes me feel happy. It’s just a pretty product. My opinion is all my own.
