Comfort Food Any Time of Year
I know I’m not really still supposed to be making comfort food in the spring, right? But cheese!! Cheese makes me happy. So when I discovered Ivanhoe cheese is also made by Gaylea Foods, I thought I might give some a try and concoct a meal out of as much cheese as I wanted. We ended up with the best three cheese extra cheesy spaghettini bake, and we found a new family favourite.
Cheese, plus spaghettini, plus tomato sauce equals awesome meal in most kid’s eyes. Thank goodness for that, because let’s just say we have been in a rut this month. When every single meal is met with: “Um can I just have a peanut butter sandwich?” You know you are in trouble. Cheesy spaghettini bake to the rescue.
By the way did you know that March is also Nutrition Month? Cheese is an excellent source of protein that’s high in calcium and B12. And it is very low in sodium so that works well with my diet. This time around I gave Gay Lea’s Ivanhoe Cheese a try. There are numerous varieties of the Ivanhoe aged cheddar and specialty cheeses. Ivanhoe has a great reputation for high quality cheese products. Ivanhoe is the oldest cheese company in Canada. For this recipe we opted for some Monterey Jack and Old cheddar. I can’t wait to try naturally smoked Gouda next. Ivanhoe also offers Kosher and Halal varieties.

Ingredients
- One egg
- 1/2 cup of Gay Lea cottage cheese
- 1/2 cup of Ivanhoe Monterey Jack
- 1/2 cup of Ivanhoe Aged Cheddar
- 1/2 a small package of spaghettini
- 1 can of tomato sauce
- 1 pound of ground beef
Instructions
- Brown the ground beef
- Add the tomato sauce to skillet after draining the fat from the ground beef.
- Boil the noodles.
- Heat oven to 325 degrees.
- Grate both cheeses and measure.
- Crack egg and put it in a bowl. Beat gently.
- Add the cottage cheese to egg mixture.
- Add the lighter of the two cheeses and mix together.
- Combine the tomato and meat sauce mixture to the egg and cheese mixture.
- Layer the mix on top of the noodles. Make sure the casserole dish is lightly greased first.
- Spread the remaining cheese on top of the casserole.
- Cover and Bake for 25 minutes at 325 degrees.
- Enjoy!

I love foods cooked with cheese of any type and so do the kids. When the grands are going to be here for meals, I always look for recipes that include cheese not only because they like it but because they will only drink milk with chocolate in it and I worry they don’t get enough calcium.
